If the front view area (width x height) of the cameras is taken as an aggregate measure of their size, the Sony RX100 VII is considerably smaller (57 percent) than the Panasonic GH7. It is worth mentioning in this context that the GH7 is splash and dust resistant, while the RX100 VII does not feature any corresponding weather-sealing.

Any camera decision will obviously take relative prices into account. The listed launch prices provide an indication of the market segment that the manufacturer of the cameras have been targeting. The RX100 VII was launched at a lower price than the GH7, despite having a lens built in. Usually, retail prices stay at first close to the launch price, but after several months, discounts become available. Later in the product cycle and, in particular, when the replacement model is about to appear, further discounting and stock clearance sales often push the camera price considerably down. Then, after the new model is out, very good deals can frequently be found on the pre-owned market.
Sensor comparison
The imaging sensor is at the core of digital cameras and its size is one of the main determining factors of image quality. A large sensor will tend to have larger individual pixels that provide better low-light sensitivity, wider dynamic range, and richer color-depth than smaller pixel-units in a sensor of the same technological generation. Furthermore, a large sensor camera will give the photographer more possibilities to use shallow depth-of-field in order to isolate a subject from the background. On the downside, larger sensors tend to be more expensive and lead to bigger and heavier cameras and lenses.
Of the two cameras under consideration, the Panasonic GH7 features a Four Thirds sensor and the Sony RX100 VII an one-inch sensor. The sensor area in the RX100 VII is 48 percent smaller. As a result of these sensor size differences, the cameras have a format factor of, respectively, 2.0 and 2.7. The sensor in the GH7 has a native 4:3 aspect ratio, while the one in the RX100 VII offers a 3:2 aspect.

With 25MP, the GH7 offers a higher resolution than the RX100 VII (20MP), but the GH7 nevertheless has larger individual pixels (pixel pitch of 3.00μm versus 2.41μm for the RX100 VII) due to its larger sensor. Moreover, the GH7 is a much more recent model (by 4 years and 10 months) than the RX100 VII, and its sensor will have benefitted from technological advances during this time that further enhance the light gathering capacity of its pixels. Coming back to sensor resolution, it should be mentioned that the GH7 has no anti-alias filter installed, so that it can capture all the detail its sensor resolves.
The resolution advantage of the Panasonic GH7 implies greater flexibility for cropping images or the possibility to print larger pictures. The maximum print size of the GH7 for good quality output (200 dots per inch) amounts to 28.9 x 21.7 inches or 73.4 x 55.1 cm, for very good quality (250 dpi) 23.1 x 17.3 inches or 58.7 x 44.1 cm, and for excellent quality (300 dpi) 19.3 x 14.5 inches or 48.9 x 36.7 cm. The corresponding values for the Sony RX100 VII are 27.4 x 18.2 inches or 69.5 x 46.3 cm for good quality, 21.9 x 14.6 inches or 55.6 x 37.1 cm for very good quality, and 18.2 x 12.2 inches or 46.3 x 30.9 cm for excellent quality prints.
Unlike the RX100 VII, the GH7 has the capacity to capture high quality composite images (100MP) by combining multiple shots after shifting its sensor by miniscule distances. This multi-shot, pixel-shift mode is most suitable for photography of stationary objects (landscapes, studio scenes).
The Panasonic Lumix DC-GH7 has a native sensitivity range from ISO 100 to ISO 25600, which can be extended to ISO 50-25600. The corresponding ISO settings for the Sony Cyber-shot DSC-RX100 VII are ISO 125 to ISO 12800, with the possibility to increase the ISO range to 80-25600.
In terms of underlying technology, the GH7 is build around a CMOS sensor, while the RX100 VII uses a BSI-CMOS imager. Both cameras use a Bayer filter for capturing RGB colors on a square grid of photosensors. This arrangement is found in most digital cameras.

Many modern cameras cannot only take still pictures, but also record videos. Both cameras under consideration have a sensor with sufficiently fast read-out times for moving pictures, but the GH7 provides a higher video resolution than the RX100 VII. It can shoot video footage at 5.7K/60p, while the Sony is limited to 4K/30p.

One difference between the cameras concerns the presence of an on-board flash. The RX100 VII has one, while the GH7 does not. While the built-in flash of the RX100 VII is not very powerful, it can at times be useful as a fill-in light.
Both cameras have an articulated rear screen that can be turned to be front-facing. This feature will be particularly appreciated by vloggers and photographers who are interested in taking selfies.The reported shutter speed information refers to the use of the mechanical shutter. Yet, some cameras only have an electronic shutter, while others have an electronic shutter in addition to a mechanical one.
